Wascotopia

We're all neighbors in Wasco Ca.

Okay this one really tells on me that I don't actually live in Wasco. According to the website Jim & Wanda Eskew have made food for the people of Wasco for over 40 years in a grocery store and at Main Street Deli then down to Sq's Place, specializing in Sausage and Catering.
Wanda joined Wascotopia and this is on her member page " We Make our own German Sausage and do catering, we are open Tue. - Fri. 6 A.M to 4 P.M."

Is the sausage good? sounds yummy.
What's the history?
Did you go to the Deli?
Help fill in the story on this one.

German Sausage is there specialty for sure! The have hot or mild. It is great on the BBQ. Jimmy and Wanda are great people and even if they are closed you can call the number on the window and Wanda will drive rite down and sell you all you may need! This service is great when you forget and just got to have it! I have been to BBQ's out of our area and somone is cooking this famous german sausage and I'll ask the cook "where did you get the sausage?" They have replied "I can't tell you it's a secret." One bite and I said "you got this in WASCO at SQ's!!!" they quickly reply with "SHHH!"
It's a great treat and is best cut up after cooking in about two inch pieces diped in spicey mustard!

Well I finally did it. I was in town during the day last Tuesday and I stopped in. I didn't know quite what to expect. A friend of mine in Bakersfield heard of SQ's on eBay. I read Wanda's web page and figured it would be a deli counter and that's it. This is what I found.
It's just a little store front on a side street. Behind Teresa's on F st. As I walked in there was a little room to the right just filled with collectable items. The main room has tables and chairs, nothing fancy. Just a place for nice folks to sit and discuss and eat. There were lot's of things to look at. As Jimmy showed me around I spotted the sausage press back in the work area. The gizmo has a cylinder a bit bigger than a paint can with a crank at the top and a nozzle below to slide the casing onto. Old School all the way. Just then he pointed out the old one he stopped using years before. That one was even older school, made much heavier out of cast iron or something.
After introducing myself we got right down to it. "You sell German sausage here? Load me up." I wasn't hungry right then so I asked for some to cook at home. He wrapped up a 6 foot coil in white paper and charged me nine bucks. It smelled awesome. As I was leaving Wanda came in and I got to meet her too. They seem like really nice folks.
The next day I got out my big skillet and put the whole coil in at once. Before it started cooking I could smell the liquid smoke and other spices. I had it on low to let it cook through. I watch the food channel, I put on my foodie hat for the big critique. I sliced off a morsel. Humm, a bit saltier that I like. Another bite. I like the seasonings. The smoke is not as pronounced as I would have thought by how it smelled before cooking. Another bite. Ya know . . . looking down from my food snob tower I saw that I had already polished off the pound of the thing. Yeah I would say that the Sausage they make is a real Wasco treasure that you won't find anyplace else. This was the mild, next time the hot and the breakfast sausage.

I have lived in Wasco my whole life and know the Eskew's very well...my parents went to school with Jimmy and Wanda... We have served their sausage on many special occasions and some occasions just because we love it. my sister lives in Seattle and takes sausage home everytime she visits....my dad says that he knows the absolute true story about Jimmy's german sausage.....but he says that he is sworn to secrecy and he won't tell....

I have known Jim Eskew since his Phil's Food Market days when I used to go there with my Grandpa, Jim McCabe. Since then my children and I have followed the Eskews around in each of their commercial endevors. The German Sausage is the best in the world! I have been eating it for years and have never found any better. Now my kids and grandkids enjoy the same German Sausage that I love. It is reknowned throughout the county for it's quality. I love to throw a couple of rolls on the grill. The family just loves it.
